



Mark von Waaden, Franchisee & CEO
Rolling Dough, Ltd. was formed by Monica and Mark von Waaden to develop and manage Panera Bread bakery-cafes in the Houston, Texas greater metropolitan area. We are solely focused on the Panera Bread brand and its success of our ten Bakery Cafes in Houston. Mark von Waaden is Ceo of Rolling Dough, Ltd. and also President of Waterfall Financial Services, which provides wealth management services for a small group of individuals. Before entering the restaurant industry, Mark was an attorney with one of the 50 largest law firms in The United States; Sonnenschein Nath & Reosenthal. Mark also coaches both of his son's baseball teams. He enjoys spending time with his family, traveling and swimming. Mark & Monica live in Austin, Texas with their two sons.
Keith Isbell, Operating Partner
Keith spent 1992-2003 working in Chicago, Illinois in the restaurant industry on all levels of operations. In 1995, he opened and managed Walter Payton's Roundhouse in Aurora, Illinois. This historic 80,000 square foot roundhouse was a restaurant/entertainment complex housing the largest micro-brewery in the state of Illinois alone. In 1998, Keith joined AppleIllinois, LLC, a franchise of Applebee's restaurants, in Chicago. As Area Director for Northwest Chicagoland he operated six restaurants. AppleIllinois was franchise of the year in 2000 & 2001. Keith joined Rolling Dough in February of 2003 as the operating partner. He oversees all areas of the day-to-day business including human resources, construction, training, marketing, bakery and cafe operations. He enjoys anything sports related and his family. He coaches his son's baseball teams and is a cheerleader at his daughter's swim meets. Keith is married with two kids and lives in the Houston area.
John Segura, Director of Sales and Marketing
John has been in the restaurant industry for over twenty years. He has worked for Marriott Hotels and Guadalajara Hacienda restaurants in Houston in management and as the Director of Catering Operations. John graduated from Sam Houston State University with a degree in Advertising. He joined Rolling Dough in 2008 as The Director of Sales and Marketing. John is responsible for all aspects of Sales, Marketing and developing relationships with area business and organizations to help build catering and bakery-cafe sales. John also directs local marketing efforts by designing ads, in-house marketing, and working with local media to develop radio and TV spots.

Kirk Doughty, Director of Human Resources
Kirk has been in the restaurant industry working in operations since 1993. Kirk graduated with a degree in Restaurant & Hotel Management from Arkansas Tech University in 1993. He joined Landry's In Houston, Texas and worked as General Manager in multiple locations. He joined Rolling Dough in 2003 as General Manager and opened two locations. He was promoted to Regional Human Resource manager in 2005. Kirk plays the drums and is a full-time fan of music. He is married with two daughters and lives in the southwest part of Houston.
Danny Ramirez, Regional Bakery Operations Manager
Danny joined Panera Bread in New York in 2003 as a baker. Danny was promoted to Bakery Market Manager for Rolling Dough in 2008. He oversees all bakery operations in the Houston market. Danny was a highly decorated baker before being promoted and is responsible for teaching the craft and art of baking to all bakers in the market. Danny is married and lives in the Houston area.
